Below, you will find a recipe. You must determine which ingredients are plant products, then WRITE A PARAGRAPH or more about each plant product including at a minimum, the following information listed below. You should consider including more information that makes your report more interesting and informative. Remember to cite your sources of information. You must use APA formatting for intext citations (author, date) and for your
“references” or “works cited” section at the end.
1) What is the scientific name of each plant used in the recipe? (Be sure you use correct format for scientific names – see textbook chapter 8.)
2) Where is each plant grown commercially in the USA – what states specifically, OR where in the World is it grown if it is NOT produced commercially in the USA – what countries specifically? (You may need to go to the grocery store and look over the produce section labels to figure this out. It wouldn’t hurt to do that.)
3) What specific botanical part(s) of each plant are used in the recipe?
4) Discuss/explain how the plant/crop is commercially produced, harvested, and/or processed. This should be several sentences up to a paragraph.
You should use proper English grammar and complete sentences. A brief Introductory section is very useful to make the overall paper more coherent. Your last name followed by the recipe title is an appropriate file name for you
paper. Use any references that you deem necessary (with corresponding intext citations), there are about 30 books on reserve for this course at the FGCU library with information for you to use for this assignment and there are a few e-books on fruits and vegetables here in the modules as well. You are required to use your textbook as one of your references and be sure to cite the information you got from your textbook within the essay. (Do not write in second person … the word “you” and all of its relatives like “your” and “you’re” are not permitted in this assignment, and yes, I know “how-to-do” recipe instructions are almost always written in second person, but you’re NOT writing recipe instructions.)
Layered Salad with Beets and Brussels Sprouts
• 1 cup English walnut halves
• 1 cup pearled barley
• 1/3 cup extra-virgin olive oil
• 2 large pink grapefruits
• 3 tablespoons red wine vinegar
• 1 small shallot, finely chopped
• 2 teaspoons Dijon mustard
• 8 cups baby Romaine lettuce leaves
• 1⁄2 teaspoon honey (not a defined plant product)
• 1⁄2 pound Brussels sprouts, thinly sliced
• 4 large cooked and peeled table beets, cut into wedges
• Kosher salt & freshly ground black pepper
• 1⁄2 cup juicy pomegranate seeds
Preheat the oven to 350oF. Spread the walnuts out on a rimmed baking sheet, and bake until golden and toasted, 8 to 10 minutes. Let cool, and roughly chop.
Meanwhile, bring a small saucepan of water to a boil. Add the pearled barley, and simmer until plumped and tender, 20 to 25 minutes. Strain and rinse under cold water. (The barley can be made and refrigerated up to 2 days ahead.)
Use a sharp knife to remove peel and pith from the grapefruits. Cut the grapefruits into pieces, and remove the seeds.
Whisk the red wine vinegar, chopped shallot, Dijon mustard, honey, 1/2 teaspoon salt and a few grinds of black pepper in a medium bowl. Slowly drizzle in the extra-virgin olive oil, whisking constantly, until blended into a vinaigrette.
Using a 3-quart straight-sided tall glass bowl for 1 large salad or four 16-ounce wide-mouth glass jars for 4 individual salads, make a first layer with half the baby Romaine lettuce leaves, then add the following in separate layers: the grapefruit,
the Brussels sprouts, the pearled barley, the beets, and the remaining baby lettuce leaves. Sprinkle the walnuts and juicy pomegranate seeds on top.
If making 1 salad, just before serving, transfer it to a large bowl, toss with the vinaigrette and season with salt and black pepper. If making 4 salads, add vinaigrette to each jar, season with salt and black pepper, cover with the lid and shake to coat.
