Response(Antonie) Prior to watching these videos and reading through the chapter, I knew not all fats were bad for your health. For example, I knew that fish, nuts and avocados had good fats but I didn’t know why they were good for you. I also remember my family cooking with a tub of lard and now it seems less common. I thought it must have to do with health reasons. I generally thought too much fat clogged your arteries, causing poor health.I am now more knowledgeable as to types of fat and that it is beneficial to consume. I was surprised of the health benefits such as helping with cardiovascular disease, immune and inflammatory responses. I also did not know that vegetables contain their own health essential oil. This may change my eating habits and look towards various vegetables and fish.
